I Tried the Viral Berry Cube Dessert Everyone’s Talking About

Ingredients

Raspberry Sauce

Raspberry Mousse

  • ⅔ cup granulated sugar
  • 1 packet unflavored gelatin (bloomed in ¼ cup cold water)

Additional

  • Pistachio cream
  • White chocolate (dyed red) or ruby chocolate, melted
  • Half strawberries, for garnish

How to Make It

  1. Coat silicone cube molds with melted ruby chocolate or red-tinted white chocolate. Make sure the sides are fully covered, then freeze until firm.
  2. In a small saucepan, cook the strained berry puree with sugar and lemon juice until it thickens slightly. Let it cool.
  3. For the mousse, heat the second batch of berry puree with sugar until dissolved. Stir in the bloomed gelatin and mix well. Allow it to cool to room temperature.
  4. Remove the chocolate-coated molds from the freezer. Pipe mousse halfway, add a small spoon of pistachio cream and a bit of raspberry sauce in the center, then fill the rest with mousse.
  5. Freeze for a few hours until completely set.
  6. Carefully remove the cubes and top each with half a strawberry.
